Berry Coconut Pops

Nature’s sweetest gifts—whole fruits—can be used in so many creative ways.

Get the kids involved in creating a healthy summer snack they’ll love like these berry coconut pops.

These refreshing frozen treats offer endless possibilities for highlighting seasonal fruits and herbs.

You’ll need some ice-pop molds, some small chunks of fresh fruit, a liquid filling (such as blended fruit, unsweetened iced tea, or coconut water), and herbs or spices.

Berry Coconut Pops Ingredients

3 cups fresh seasonal berries of choice
2 dates, pitted
About 1/2 cup fresh berries, sliced if large
1/2 cup fresh, sliced, or unsweetened dried coconut flakes

Instructions

  1. In a food processor, process 3 cups of the berries and the dates until mostly smooth, one minute.
  1. Put a few teaspoons of sliced berries and coconut in each ice-pop mold. Pour the puree over the top, insert the handles or popsicle stick, freeze until solid, and enjoy! Warm-weather treats have never been cooler.
