Cheesy Garlic Breadsticks

Here is one of our go-to comfort recipes that pair healthy fats and proteins to satisfy the appetite while helping keep insulin levels in check.

Makes 6 servings | Prep time: 10 minutes | Bake time: 10 minutes

Ingredients

Cheesy Garlic Breadsticks

1/2 cup almond flour
3 tablespoons coconut flour
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/2 cup sour cream
4 tablespoons (1/2 stick) unsalted butter
2 large eggs

Toppings

2 tablespoons unsalted butter, melted
1/2 teaspoon minced garlic
1/2 cup shredded mozzarella cheese, divided
1/3 cup grated Parmesan cheese
2 teaspoons minced fresh parsley
Flaky sea salt, for sprinkling
Tomato sauce, for serving (optional) 

Instructions

  • Preheat the oven to 425 degrees F. 
  • Line a rimmed baking sheet with parchment paper. 
  • In a small bowl, sift together the almond flour, coconut flour, garlic powder, Italian seasoning, and salt. 
  • In a medium bowl, beat the sour cream and butter together. 
  • Add the eggs one at a time, beating well to incorporate. 
  • Add the dry ingredients and mix well. 
  • Pour the batter onto the prepared baking sheet and use a spatula to spread the batter evenly into a large oval shape. 
  • Mix the melted butter plus garlic and drizzle over the batter. 
  • Sprinkle 1/4 cup of mozzarella over the batter. Bake for five minutes. 
  • Sprinkle with the remaining ¼ cup of mozzarella and Parmesan and bake for another five minutes. 
  • Sprinkle with the parsley and flaky sea salt and cut into twelve breadsticks. 
  • Enjoy warm, with tomato sauce for dipping if you like!
