These Coconut Pancakes are more than just a delicious breakfast—designed not just for flavor, but for healing.

Coconut Pancakes Ingredients

4 large eggs, at room temperature
1/4 cup avocado oil, plus more for cooking
2 tablespoons full-fat coconut milk
1 tablespoon honey (optional)
1 teaspoon gluten-free vanilla extract
1/3 cup coconut flour
1/4 teaspoon salt
1/2 teaspoon baking soda
Maple syrup or diet-compliant topping of choice, for serving

Instructions

  1. Beat the eggs in a large bowl. Add the oil, coconut milk, honey (if using), and vanilla.
  1. In a separate medium bowl, combine coconut flour, salt, and baking soda.
  1. Transfer the flour mixture to a sifter or fine-mesh strainer. Gradually sift the flour mixture into the egg mixture while mixing it with an electric mixer until smooth.
  1. Heat a large frying pan or skillet over medium heat. Melt or drizzle oil in the pan, swirling to coat, then reduce the heat to medium-low. Pour batter into the pan making a 3- or 4-inch pancake.
  1. Cook on one side until firm and bubbles begin to form on top and pop, then flip and cook on the other side until cooked through, about one to two minutes more. Repeat with the remaining batter.
  1. Top your coconut pancakes with maple syrup and enjoy.
