
Reducing your environmental impact may be simpler than you think.
A 2023 analysis led by Anna Grummon, PhD, at the Stanford University School of Medicine found that small, practical food swaps could meaningfully reduce the average American diet’s carbon footprint—without sacrificing health or satisfaction.
Researchers combined national dietary data with greenhouse gas emission estimates for thousands of foods commonly eaten in the United States.
They identified four major food categories—proteins, mixed dishes, dairy, and beverages—that contribute most heavily to diet-related emissions.
By modeling lower-impact alternatives, they demonstrated that modest substitutions could yield significant environmental and health benefits.
For example, replacing a single beef burger with a chicken or plant-based patty can cut that meal’s carbon footprint by up to ten- to twenty-fold.
Cattle generate large amounts of methane and require extensive land and feed resources, making beef the most carbon-intensive common protein source.
Shifting toward poultry, fish, or plant-based options can substantially reduce emissions while supporting cardiovascular and metabolic health.
Grummon’s team also found that younger adults responded positively to learning about the environmental impact of their food choices, suggesting that awareness itself can drive change.
Even partial adoption of these substitutions—by as little as four to ten percent of the population—could make a measurable difference.
As Grummon explains, “We’ve identified simple, achievable substitutions—small changes—that can still produce a meaningful impact.”
Her team’s findings highlight that sustainable eating need not be all-or-nothing. Sometimes, progress begins with one mindful meal at a time.
